We are looking for a Sous Chef to join our Hospitality department!
In this role, you will:
- Serve as a senior member of the kitchen brigade, providing support to the Head Chef while collaborating with a team of 14 chefs and 8 porters.
- Take charge of all kitchen operations in the absence of the line manager, ensuring smooth and efficient functioning.
- Uphold the University's guidelines on Food Safety, financial controls, Health and Safety, HACCP, and staffing procedures.
- Prepare exceptional quality dishes in accordance with menu specifications, catering to both high-volume units and special events, including banquets and functions.
- Oversee stock control, encompassing consolidated ordering, goods receiving, menu development, and management of portion sizes and waste.
- Work closely with the Hospitality management team and actively engage in training programs designed to elevate food and beverage offerings as well as enhance management and customer service skills.
The ideal candidate will embody a proactive, can-do attitude and possess a proven track record of achieving exceptional standards in food production. You will bring significant experience in kitchen management and menu development, highlighting your ability to lead and inspire team members effectively. A solid understanding of relevant food safety and health regulations is essential, along with experience in financial management, including budget oversight and variance reporting. Additionally, you will demonstrate outstanding organisational skills and the capacity to juggle multiple priorities in a fast-paced, high-volume environment.
Flexibility is important and the role includes early morning, evening and weekend working on a 5 out of 7 days per week contract (36.5 hours per week).
