About This Opportunity
This is an excellent opportunity for an enthusiastic Commis Chef to join our culinary team at Patina Restaurant at Customs House. Assisting the Executive and Sous Chef in maintaining the high culinary standards.
Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. The restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.
Staff are required to fulfil 38 hours per week across a seven day roster including some weekends, and evenings.
Key responsibilities will include:
Production of all foods for Patina at Customs House
Production of function for food for in house events and for outside catering
Maintenance of high standards of food output
Assist in the training and supervision of kitchen hands
Responsible use of all kitchen equipment
Recording of cold rooms and fridge temperatures
Recording of temperatures of incoming stock where required
Maintenance of mise en place for restaurant and function
Informing the chef in charge of stock requirements
Following all requirements in maintaining the Food Safety Plan

About You
Completion of apprenticeship in cookery
Minimum of 2 years experience in the role of commis chef chef in a similar establishment
Current BCC Food Safety Supervisor Certificate
Strong knowledge of the production of a la carte and banquet foods
Good knowledge of all kitchen procedures and operations
A genuine interest in and knowledge of food and current trends
Excellent organisational skills
Well-developed communication and interpersonal skills
Knowledge of workplace, health and safety procedures in a kitchen
Valid Driving License
What We Can Offer
This is a Full-time, Fixed-term position up to 2 years at Cook Grade 3 Load Rate.
The full-time equivalent base salary will be $67,135.02 plus super of up to 17%. The total package including superannuation will be $78,547.97.
Customs House has a Christmas closure period to refresh at the end of the year, is closed public holidays and also offers a generous 17% superannuation and leave loading.
