  • Study description:

    Freeze-drying is the most common process used industrially for the long-term preservation of probiotics and lactic starters. During this process, bacteria are exposed to harsh environmental changes leading to huge viability losses. By adding some cryoprotectants/lyoprotectants in the drying medium, the survivability of probiotics can be improved.

    This thesis will be performed in association with Lesaffre International and the PAM LAB supported by Institute Agro Dijon and Burgundy University. It aims to study the impact of the use of yeast-derived ingredients as cryoprotectant/lyoprotectants on the viability of probiotics after freeze- drying.

    The objectives of this thesis are:

  • To characterize the impact of different protective ingredients on the survivability of selected probiotics strains during freeze-drying using different biological and biochemical methods.
  • To understand the mode of action of the different ingredients tested. Chemicophysical analysis will be used to identify key markers of cell damages induced by the freeze-drying and the link between ingredient composition and protective effect will be studied.
  • Generate ideas for the development of innovative cryoprotectants/lyoprotectants (proof of concept).

    Offer Requirements Specific Requirements

    MSc in Biochemical Engineering, Biotechnology or equivalent. Scientific curiosity: demonstrated ability to translate research questions into pragmatic and efficient experimental plans; Experience in microbiology/biotechnology; Knowledge and expertise in chemical-physical technics (DSC, NMR, …) and drying/freeze-drying processes is a plus. Interest for industrial environment Good interpersonal skills: demonstrated ability to work in a team within multi-disciplinary projects Good communications skills; experience delivering results to both experts and non-experts Fluency in written and spoken English is mandatory. Basic knowledge of French would be appreciated. Good organizational skills; demonstrated autonomy and working in project management mode
